What can I say about green curry, that hasn’t already been said? If you know about Thailand, you know about green curry, it is synonymous with Thailand, or rather inseparable.
It is hot, spicy, full of flavour, deliciously cooked in coconut milk, exciting with eggplants. It is a medium curry, hotter than red, but not as spicy as the jungle curry. It derives its colour from the main ingredient in the dish: green chillis.
It’s preparation is unmistakable and a room will quickly fill with its distinctive aromas as this epicurean delight is cooking. Enough said, sit down, time to eat.
