Ginger, lots of fresh root ginger. The Thai word for ginger is khing (ขิง). The Thai word for fried is pad (ผัด).
Therefore: stir fried ginger with chicken, pork, beef or king prawns is a real treat, if you like ginger.
If you don’t, there are many more dishes, because, sorry, the ginger stays, along with the chillies.
And don’t forget the vegetables, loads of vegetables: broccoli, carrots, spring onions, cauliflower, peppers (red, yellow) , onions (they go well with the ginger), mushroom, and ginger, (yes, ginger is considered a vegetable, because it is the root of the ginger plant).
The aroma is fantastic as all this is sizzling in the wok, you can’t miss the ginger, or the chillis!
