LaapRefreshingly spicy Thai salad
We’re moving into northeast Thailand with this dish and into grassroots Thai cuisine.
Originating from near the Laos border, this traditional salad of spicy minced chicken, beef, pork or mushrooms is seasoned with onions, ground rice, lime, coriander and mint and served cold.
It is best eaten with your hands with fresh, crisp lettuce leaves and sticky rice. If you want to go all the way, try it with Som Tam, the traditional spicy Thai salad, (although this is not on our menu this week).
Sat in the garden, in the sunshine, with friends; this is a great comfort food.
